I also was wanting to use the ACCLV for SPI and I2C.  I downloaded the evaluation version to see if it would work.  It seems that there are examples installed by default:

MAX6675 Thermocouple to Digital Converter.vi

However, the block diagram is locked, and they didn't expose the controls for MISO, MOSI, or CLK.  I am still trying to find a way to make this work.  I would like to buy it for work, but I need to know I can use it for other chipsets.  I understand it is up to community to debug the newer processors(outside of the standard Arduino's listed), but the code as is is useless if you can not remap the pins.
